I know on our V1 service the minimum is 3 but depending on your phone you can have up to 6 callers on conference calling. That depends on your phone though, older phones are only able to connect 3. On GSM it should also depend on the phone but a minimum of 3.
If you have a large number of people that you need on a conference call you may want to look at an app that is set up for it. Whatsapp is always my recommendation but I can also link you to this article that gives options for other apps.
